Eggs In A Basket

I’ve been enjoying these for years, and just recently ate it this morning courtesy of my girlfriend. Based on that, it put me a search for the perfect recipe because there’s many ways of doing it. The one below I found to be the best out of the few I saw around the internet recipes. If you have your own or thoughts on this one, please share. Thanks to Lemons in Water for the recipe.

Ingredients (to make two slices):

1/2 T butter

2 slices of good fresh bread

2 slices of pepper jack cheese

4 slices of tomato

basil (I used flakes)


Cut a 2 inch circle from each slice of break, then butter both sides of the bread

Over medium-high heat, place both slices in the pan

crack one egg in the each hole, let cook, about 2 minutes

Flip when egg is 75% cooked, heat other side, about 1 minute

When both sides are toasted and eggs are cooked, put on place, then place 1 slice of cheese on each slice of bread. Then layer with tomato.

Sprinkle with basil and enjoy!

    this is a good recipe. i like to cut some avocado and put it on there as well. growing up, my mother called these “toad in a hole(s)” no idea why, but i like it.

    My dad, being British, called this dish “Toad in the Hole” too.

    My boyfriend and I made this today for lunch, and in order to make it a little more substantial, we added some ham chunks on the cheese. Apparently he used to make it in boyscouts and called it “bulls-eye toast”.
